Praline Sweet Potato Souffle
8 to 10 large baked yams
2 sticks butter or margarine
1 cup light brown sugar
1 cup honey or corn syrup
1 teaspoon ground cinnamon
2 cups finely chopped pecans
1/2 cup all purpose flour
1/4 teaspoon salt
Peel and mash potatoes; add 1/2 cup brown sugar; 1/2 cup honey or syrup, cinnamon, salt, and butter. Mix well.
Place in a casserole dish. Bake 30-40 minutes covered.
Praline Topping:
Combine 1 stick butter, pecans. Add 1 1/2 cups brown sugar, add all purpose flour. Mixture should be crumble-looking. Sprinkle over casserole. Bake uncovered for 5-10 minutes. Watch carefully...
